First it's important to understand that Mold needs 3 things to grow:

One: A damp and dark area (your hvac coil)
Two: Temperatures between 65-85 degrees (the purpose of your coils)
Three: Organic Material

UV lights emit UV-C radiation, which disrupts the DNA and RNA of microorganisms, preventing them from reproducing and effectively killing them.
